Thai Green Curry Recipe * 150 g. of sliced chicken breast * 2 tablespoons vegetable oil (soy) * 1-2 tbsp Thai green curry paste (Thismakes it spicy) * ½ cup coconut milk 1 cup coconut milk 1 cup pea eggplant (eggplant into pieces not selected) * 5 kaffir leaves stem removed and torn * 2 tbsp Thai fish sauce 1 teaspoon sugar * A handful of fresh basil leaves * 1-2 long red chilli diagonally sliced (red bell pepper will do) the oil in a saucepan over medium heat and add Thai green curry paste, stir regularly to prevent the paste from burning. Add coconut milk, chicken and cook until fragrant. Bring tolow boiling, then add eggplant, kaffir lime leaves, fish sauce, sugar then coconut milk. Simmer until the chicken is cooked remove from heat and transfer to bowl. Garnish with fresh basil leaves.
