Thai-style Fried Noodles, "Phad Thai" *100 g of thin rice noodles * 3 tablespoons vegetable oil (soy) * 1 teaspoon chopped shallots 20g chopped red pork * 1 tablespoon dried shrimp, rinsed and dried * 10 g of tofu, diced * 3 tablespoons Chinese salted radish * 1 tbsp tamarind water / juice *, 50 g of chopped Chinese chives cut 1-inch strips * 2 tablespoons chopped roasted peanuts * 1 tsp pepper * 1 slice of lime * 2 tablespoons toasted sugar * 1 egg * ¼ cup bean sprouts 1 tablespoon Thai fish sauce Soak noodles in water for 5 minutes until soft then drain is. Heat the oil in aWok over medium heat and stir fry the shallot and the roasted chili powder until fragrant and color changes. Add pork, stir, then add the tofu, cooked dried shrimp and salted Chinese radish. Press the dough on the back of the wok. Add pasta and mix well then add the sugar, fish sauce and tamarind mixture, stir well. Break in egg and stir until cooked. Add Chinese chives and bean sprouts stir 30 seconds add peanuts and serve.

Mae Sai, the Burmese border in northern Thailand

Mae Sai is the northernmost district (amphoe) of Chiang Rai Province in northern Thailand.
